At Restaurant Sagafjord, we have carefully considered which ingredients we use when planning the season’s menu. For us, ingredients should mean good quality, sustainability, and delicious taste. See our menu here

We source ingredients from small, local producers around the fjord and its surrounding area. On this page, you can read more about the producers, the ingredients, and the considerations our talented chefs have made for the dish.

STENSBØLGÅRD

Kirke Hyllinge

We get our salads, herbs, vegetables, and eggs from Stensbølsgård. They grow fresh, organic, seasonal vegetables and herbs that deliver a strong and intense flavor experience. They put a big emphasis on making sure the soil they grow in is healthy and alive, thanks to added compost, living plants in the soil, and much less machinery use.

BIRTHESMINDE

Vipperød

At Birthesminde, we order our delicious dry-salted and smoked bacon, which comes from Danish black-pied landrace pigs. It leaves a dark and intense taste in the meat, partly with a nutty flavor. The pigs are allowed to move around larger areas and under the open sky. They roam in forests and fields with clover grass, from their birth all the way to when the pig is slaughtered.

GRENNESSMINDE

Taastrup

Grennessminde delivers our baked goods, like sourdough bread and morning rolls, as well as other pastries. It is an organic bakery that only works with organic ingredients.

VALNØDDEGAARDEN

Skibby

Valnøddegaarden delivers delicious home-grown agricultural potatoes. It’s a family-friendly place that focuses a lot on sustainable and biodynamic vegetables. Everything that isn’t eaten or sold is reused as feed for the animals.

NORDFRA

The Faroe Islands

At Nordfra in the Faroe Islands, we get our delicious haddock delivered, which is hook-caught on longlines. It’s gentle and better for animal welfare and the taste. You can both see and taste in the haddock meat that the fish has lived under favorable conditions.

TUSENVIN

Holbæk

TusenVin is, among other things, one of our wine suppliers. Everything is grown locally and made from high-quality Danish organic ingredients, using gentle and natural processes. The wine is produced in their own winery on the vineyard, so the grapes only need to be transported a few hundred meters.

VEJRHØJ VIN

Odsherred

Vejrhøj Vin is one of our wine suppliers. They farm their vineyards organically and with great respect for nature. They select grape varieties that ripen well in the cool Danish climate and without using pesticides.

ØRNBERG VIN

Sjællands Odde

Ørnberg Vin is one of our wine suppliers. They focus heavily on growing according to biodynamic principles, which ensures better quality and experience for the wine. Their soil is light, clay-mixed sandy soil with lots of stones, which provides good drainage and root development for the vines and adds a lot of minerality to the soil and the wines.

ØSTERGAARD MOST

Jægerspris

Østergård Fruit & Juice delivers cider and juice to us. They produce cider in the gentlest and most sustainable way. The orchard is protected by windbreaks, and the soil is sandy loam, which provides nourishment to the trees and bushes.

MØRK KAFFE

Roskilde

MØRK always delivers organic freshly roasted coffee beans for our coffee. They roast the beans slowly and gently, which gives a top-notch experience of quality and freshness. A delicious and local coffee roastery with a focus on quality and sustainability.

VINTRE MØLLER

Lejre

Vintre Møller produces organic gin and vodka, on organic fields that are nature protected. They harvest grains and botanical ingredients from the fields around their distillery. The products are made with water from their artesian well and green energy from solar and wind.
